If you’re looking for a low calorie, low fat and high protein cupcake, this is it! This recipe is SO EASY and taste good too! I want to mess around with different combos of soda, cake mix and protein powder to find some tasty cupcakes, (devils food cake๐) but here is what I did for my first try below:
โจIngredients for Cupcakes:
๐90g cake mix of choice, I actually used chocolate chip muffin mix
๐90g protein powder of choice, I used Optimum Nutrition Mocha Cappuccino
๐1 can Diet Soda, sprite recommended but I did cherry vanilla coke and they tasted fine
โจIngredients for Frosting:
๐12g white chocolate pudding mix
๐28g Light&Fit Plain Greek Yogurt or 28g Fat Free Cream cheese for thicker frosting
๐60ml unsweetened almond milk
๐30g Fat Free Cool Whip
๐1/2 t vanilla
โจRecipe:
Mix together cake mix, protein powder and soda. Pour batter into cupcake pan. (I did mini cupcakes.) Bake at 350 for 8-10 min. (Regular size cupcakes will take a little longer.) mix together frosting ingredients and chill in fridge. Let cupcakes cool and frost. Don’t forget sprinkles!!

This recipe made 24 mini cupcakes which would probably make about 6-8 regular size cupcakes. They are 32 cals per cupcake (frosting included) and macros were 3.7C/.5F/3.3P per serving. Pictured below are some I threw into a flexbowl! ๐
